The veggies are looking good.

The beetroot is powering along.
So are the carrots.
And the leeks.
We've been thinning out the beetroot and carrots over the last few weeks, and enjoying the veggies in our meals. Soon they'll all be properly spaced and they can grow to their full potential.

What's your favourite beetroot dish?

beetroot cooked, then grated as a salad with horseradish, garlic,oil, salt and pepper, and a little balsamic vinegar.

Delicious FENNEL AND BEETROOT salad or hot vegetable dish.
This is adapted from one of Jamie Oliver's recipes which just uses beetroot but it is great with fennel added.
Set oven to 180 -200.
Into a casserole dish place chunks of fennel bulb and halved or even quartered beetroot, depending on their size.
Add 10 cloves of garlic
a handful of herbs - oregano or thyme
4 to 6 tablespoons of balsamic vinegar
a good splash olive oil
Salt and black pepper
Cover and roast until tender.
Serve hot or cold with crusty bread.
