Delicious FENNEL AND BEETROOT salad or hot vegetable dish.This is adapted from one of Jamie Oliver's recipes which just uses beetroot but it is great with fennel added.Set oven to 180 -200.Into a casserole dish place chunks of fennel bulb and halved or even quartered beetroot, depending on their size. Add 10 cloves of garlic a handful of herbs - oregano or thyme 4 to 6 tablespoons of balsamic vinegar a good splash olive oilSalt and black pepperCover and roast until tender. Serve hot or cold with crusty bread.Great recipe!
