I love red cabbage and always use a splash of vinegar when I cook it. It wasn't until a year or so ago that I read that if you don't add an acid, (in your case lemon juice), in cooking that the cabbage will go blue! Then the other day I was watching a programme called Come Dine with Me and saw the outcome of not doing so. It was vile looking.
Definitely vinegar! I just used lemon juice, because the lemons were on the kitchen bench, and I was too lazy to get the vinegar out of the pantry. Don't even want to imagine what it would look like without acid. And yes, I love red cabbage, too! :)
