Caerphilly
This is a cheese that I will definitely make again. It is tasty, creamy and crumbly. Another big advantage, it does not need long maturing. You can sample it 3 weeks after you have put it in your cheese fridge.
So do you have a particular recipe that you use as the cheese looks spectacular! I grew up in Cheshire and caerphilly is one of my favourite childhood loves. It really, really looks GOOD! Jan

Jan, I use Tim Smith's book 'Making Artisan Cheese'. It is a very helpful cheese making book. Great tips & easy instructions. Great range of recipes.
