So, what better way to use up a few zucchinis from the garden?
This is my take on zucchini lasagne.
Slice zucchinis, put under grill until golden brown.




Two mad gnomes and a big garden. The Veggie Gnome does the edible stuff, the Berry Gnome the berries and taties.

you'd never had it before???? its good and especially good with eggplant!, both ingredients which i have to hide from my zucchini and eggplant hating vego kid! Loooks delish!

ReplyDeleteYes, the eggplant gives it a firmer texture, but I only have 1 little one on a plant - still growing.
I wonder if City Gnome also put mushrooms in it too... that is my favourite and even meat eaters can't tell there's no meat in it!
